Lemon Balm Pesto Pasta with Olive-Oil Poached Salmon Filets

When I prepared this dish on Sunday I was unaware of the Weekend Herb Blogging Event. Then this morning I read an announcement calling for entries that included any herb, plant, fruit, vegetable or flower -- and I was really glad I had taken a photo! it seems like a perfect entry!


Lemon Balm Pesto
2 cups herbs
1/2 cup virgin olive oil
2 cloves garlic
juice of one lemon
(or use your favorite pesto ratio)

Pulse ingredients to consistency you prefer.

Olive-Oil Poached Salmon
salt & pepper salmon, place in skillet with olive oil to cover, 1 clove garlic, 1 lemon balm leaf and poach over low heat until desired doneness.

To Serve:
Drizzle a little oil from the salmon bath to drained spaghetti and then toss with pesto.
*edible flowers from green market decorate plate

According to Wikipedia, lemon balm is native to southern Europe and the Mediterranean region. It is a perennial herb of the mint family and has a gentle lemon smell. (To me, it smelled like lemongrass.) It is more popularly used for medicinal purposes and for making herbal teas. Sometimes it is paired with fruits and used in ice cream.

Joan, the darling of this dish is the poached salmon in olive oil. I've only done it once but the addition or aromatics in the oil is a great idea.
